Quinoa, Bean and Feta salad


This belter of a salad is cheap, quick to put together and can be eaten a meal on its own, as an accompaniment to many dishes or as a great little side dish for picnics, BBQs or parties. It is all vegetarian but delivers a powerful hit of plant protein thanks to the quinoa and beans. The north African/Mediterranean flavours work really well with the Feta however if you prefer vegan food then feel free to leave it out. The mint and lemon juice is really important- it lifts the dish and makes it seem light and fresh! It can be made using freshly cooked quinoa and brown rice however for midweek lunches and meals it can also be made using microwavable packs of them- this means the dish can be made in its entirety in only about 10 minutes max.

  1. 150g cooked red quinoa
  2. 150g Cooked brown rice
  3. 1/2 can kidney beans, drained
  4. 1/2 can butter beans, drained
  5. 1/2 can sweetcorn, drained
  6. small bandful of fresh mint, roughly chopped
  7. 1 heaped tbsp. of tomato puree
  8. 1 tbsp. ground cumin
  9. 1 tbsp. ground smoked paprika
  10. 1 tsp. turmeric
  11. Juice of a small lemon
  12. 100g crumbled feta cheeseGlug of rapeseed oil
  1. Combine all ingredients in a bowl
  2. Sir through to mix well
  3. Serve!
  1. High in both fibre and protein, this dish is guaranteed to keep hunger at bay and is delicious served cold. This makes it perfect for lunch at work, at school or, well anywhere!
